Strawberry Bundt Shortcake

  1. Preheat oven 325° F (175° C)
  2. Spray bundt pan with non stick cooking spray
  3. Mix butter and sugar until light and fluffy
  4. Add eggs and 1 tbsp lemon juice, mixing well
  5. Add baking soda and sour cream, continue mixing
  6. Stirring by hand, add the flour
  7. Fold in the strawberries
  8. Pour batter into bundt pan
  9. Place it into preheated oven for 60 minutes or until toothpick inserted into center comes out clean
  10. Allow to cool for 20 minutes in pan
  11. Invert onto serving plate to cool completely
  12. Mix remaining 2 tbsp lemon juice and powdered sugar to make glaze
  13. Drizzle icing over cake
